Healthy gourmet banana bread

This delicious banana bread is specially recommended for the healthy Gourmet, following a low-carb diet.

Ingredients needed:
1 Cup Almond Flour
1/3 Cup Rice Flour
1/3 Cup Coconut Flour
2 Tbsp. flax seeds
1 Tsp. Phosphate free baking powder
1/2 Tsp. Cinnamon
3 Ripened banana’s
4 Tbsp. Coconut Oil
3 Eggs

The bread serves 3-4 people and its preparation time is around 35 minutes.

This recipe is easy and only takes around 10-15minutes to prepare before putting into the oven.
Three individual mixes are made in the beginning which than are eventually mixed together.

Preparation:
-Break the Eggs, and separate the egg white from the egg yolk into two separate bowls.
-Press the banana with a fork and mix it.

Now prepare individually the three separated mixes:

1) Put the following into a bowl and mix together with a spoon: Almond flour, Rice flour, Coconut flour, flax seeds, baking powder and cinnamon.

2) Mix the egg yolk and the liquid coconut oil with a mixer. After mixing, we add the crushed banana into this mix and mix further, until it will be homogenous.

3) The egg white should be whipped, until it becomes enough stiff, not to fall out of the container when turned around.

-Now mix 1 and 2 together with a spoon and after doing so, very gently you should add the 3rd.
This should be further mixed, very gently.

After mixing all three of them together gently, put into a bread container and into the oven for 25minutes at 200°C (400°F)

*A trick to know when the bred is ready, is to stick a toothpick into the bred and pull it out. If anything sticks on it when pulling out, keep the bread for longer time in the oven. If nothing sticks, than it is ready.
